About ARYAF PROJECT ARYAF serves Micro, Small, and Medium Enterprises operating in food processing, local hospitality, tourism, the restaurant industry, eco-tourism, and agri-tourism within west Bekaa, Zahle and South Mount Lebanon. The program aims to empower sixty MSMEs (Micro, Small and Medium Enterprises) to increase their sales volume, implement a business continuity plan, and provide training to their staff, including youth, women, and disabled individuals. The program is funded by The German Federal Ministry for Economic Cooperation and Development (BMZ) and implemented by Deutsche Gesellschaft für International Zusammenarbeit (GIZ), in partnership with Berytech, within the framework of Strengthening Agriculture, Local Communities and Small and Medium Enterprises project (ACE). Scope of Work The goal is to hire a technical consultancy: Experienced in winemaking and in viticultural practices dealing with the particularities of IPM farming. To taste the wine, research the fruit sources and grape quality, to practice the wine style and quality of the property. To offer services ranging from quality improvement advice to full-scale guidance in every step of the winemaking process. To examine the processes and lab results to offer ideas for improvement. To offer a nondisclosure guarantee, to keep the practices private. Responsibilities and Deliverables Responsibilities Company Needs /Objectives Deliverables Timeline Up to 20 full days consultancy fees accomplished during a period of 15 weeks Optimize and track grapes production from Budbreak till harvesting the produce. To produce appropriate quantities of winegrapes with the aim of optimal quality under the IPM farming procedures. NB: Vineyard of about 20 ha Submit detailed procedures regarding the winegrapes production practices calendar with respect to the IPM farming techniques. Week 33-34 (August 14th – 26th) / (1 Day on Site and 1 Day Reporting) Prevent the vineyard decline and subsequently work on its sustainability Provide Trainings and field sessions on the key viticultural practices, 1-Pruning, 2-Canopy Management, 3-Integrated Pest Management, 4-Nutrient management,5-Soil and Root system Management. Deliver at least 2 site visits dedicated to the vineyard and during 2023 vintage. Provide necessary worksheets to help implementation of the procedures / traceability of the crucial farming techniques. Week 33-34 (August 14th – 26th)/ (Up to 3 days trainings and learning sessions) Week 48 (November 27th- Nov 30th) Optimize and track wine production from grapes harvested till bottling. Explore opportunities and weaknesses and adjust the winery operations. NB: Actual production 10.000 bottles Submit written procedures for the 3 types of wines produced by the company assigning guidelines needed. To enhance production practices. To address weaknesses using the most effective methods and tools. Week 33-34 (August 14th -26th) (1 Day on site and 2 Day Reporting) Diagnose pain points, offer an improvement plan, and educate staff. Examining the current process and offering ideas for improvement. Suggest plans and emphasize on key measures (Equipment/ Machinery/ Tools/ Laboratory instruments) needed to achieve objectives Week 34 (August 21st -26th) (1 Day reporting) Identifying areas for improvement to help the winery reach its full potential. Ensure brand consistency and quality improvement Submit design, study, to implement a fundamental laboratory performing the key tests needed to test the wine all during the winemaking and maturing procedures. (pH, Acidity, Sulphur, Alcohol, Volatile acidity.) Week 34 (August 21st -26th) (1 Day on site and 1 Day Reporting) Supervision of the winemaking process; the set of steps that are taken to turn grapes into wine. Generate detailed and comprehensive procedures for the winemaking process. Offering guidance in every step of the winemaking process during site visits. Deliver at least 6 site visits to achieve the needed work; during the harvesting and winemaking stages of 2023 vintage. Week 35-36-37 (August 28th-September 15th) (6 days on Site) Improving all areas of winegrapes production and winemaking during the 2023 vintage and enhancing existing options. Follow up on the current winemaking process and include adjustments Train the key people who will manage to produce the winegrapes and the wine production under part-time consultancy. Week 35-36-37 (August 28th-September 15th)/ (2 days on site) Winery development, including fundamental layouts, and equipment selection. Advise on future planning / needs demanding small and medium investments Deliver layout and adequate list of winery equipment, tools and machinery needed to optimize the winemaking procedures on the short term and long-term Week 39-40-41 (September 25th-October 21st) (1 Day on Site and reporting) Qualifications Education: Diploma in Oenology. Agriculture Engineer specialized in Viticulture and Oenology, Highly knowledgeable and experienced in winegrapes production/ viticultural practices and especially in winemaking, working with several clients at a time. Area of Expertise. Red wine for aging produced with international noble grape varieties, Red wines for prompt consumption are produced with noble grapes varieties. White wine and Liquor. Good palate: solutions-oriented to make the best wine possible. Experience of at least 8 years in the local winemaking sector. Timeline and Application The selected Consultancy is expected to start his/her activities at the soonest after selection (the effective date is to be confirmed), and the contract duration is 15 Weeks.
